This lot of Ethiopian coffee is unusual as it comes from a single farm, Homeland Organic Coffee Estate which is managed by Zeberga Kebede, rather than as amalgamation of smallholder farmers around a central mill. Homeland Organic Coffee Estate is near Wush Wush, a town located in the Keffa region in southern Ethiopia. Fully washed and wet fermented in concrete tanks the coffee is then rinsed and floated to remove defects. The coffee is then initially dried on raised beds under shades, and then after sorting, moved to full sun. The coffee is covered at night to protect it from cold and frost.
