Hints of Black Forest Cheese Cake

This coffee, known as the ‘CM Selections’ Indigo, is part of an experimental carbonic maceration lot which have a profile of intense flavour and powerful fruit qualities. The coffee was sourced from small holder farmers around Kochere in Yirgacheffe, and was finished in a natural process. Carbonic Maceration involves the controlled fermentation of whole cherry in tanks flushed with carbon dioxide, with specific yeasts, prior to standard processing. This process has been developed by Sasa Sestic and the team at Project Origin, the CM coffees have featured in numerous world winning comp routines. We enjoy as Espresso & Filter
