Coffee beans are seeds of a fruit, commonly called a coffee cherry. During the processing stage of coffee the cherry is pulped from the seed, that seed goes on to be roasted and becomes our coffee we know and love, while unfortunately the cherry too often gets thrown out or composted.

That cherry like a lot of fruit is very sweet and delicious, so instead of throwing it out farmers started drying it in the sun and brewing tea out of it. The dried cherry became known as Cascara.

Even though it comes from the same fruit, Cascara and coffee taste completely different. They both have caffeine (Cascara only has approximately ¼ of the caffeine that coffee has) but that is where the similarities end. Cascara has very little to no bitterness and is very sweet (if brewed correctly), it is often compared to herbal tea rather than coffee. Cascara is something that every coffee drinker and non coffee drinker should try at least once, it will definitely surprise you in a good way.

Olman Valladarez

Olman Valladarez and his Finca Buenos Aires are renowned in Nicaragua specialty coffee with Olman having taken 1st place in COE 2015, runner up in 2017 and a number of placings throughout the years. This lot of Cascara is from his Java varietal trees and was sourced through a natural processing method. It has a sweetness, clarity and depth we have rarely found in Cascara. Cascara is the dried husks of the coffee cherry and is brewed like tea.
